| MACS Meet Recap Wow! Our swimmers did a fantastic job at the MACS meet Oct 17-19. We has 52 kids who swam, and many achieved personal bests! We already know that the Hurricanes will be a strong presence at both the championship meets: 18 swimmers qualified for Silver State and 11 swimmers qualified for State!! ![]() MEET OFFICIALS We are always looking to encourage parents who are willing to become meet officials - please talk to Coach Jeff or Kathy Lahr if you are interested in joining this dedicated group of people without whom we could not run our swim meets! (special thanks to Kathy Lahr and Betsy Hays, who spent the Sunday of the MACS meet training to become officials!) When we run a home meet, we rely on the goodwill of officials from other teams who come and help us out. One of the reasons they are willing to do this is that we here in Evergreen have a reputation for being a friendly, hospitable team. These folks really do appreciate it when you thank them for coming up and officiating. They appreciate our hospitality - and love our breakfast burritos!! At some point in your Hurricanes lifetime, you will be asked to make breakfast burritos for a swim meet. We offer these free-of-charge to the coaches and officials, and sell the rest at our concessions stand. Thanks to all the past and future burrito chefs - and here is a recipe to guide those of you who are up next: BREAKFAST BURRITOS Makes 1 dozen Burritos 1 dozen eggs 1 pound sausage, "breakfast" or chorizo, or bacon 1 pound shredded cheese (cheddar or monterey jack) 1 (20 0z) bag shredded hash brown potatoes or bag (28 oz) frozen Potatoes O'Brien Salt and Pepper Optional: sauteed onions, peppers, or green chilis. You can also leave out the sausage and make vegetarian burritos. Preheat oven to 250 degrees. Cook sausage and drain on paper towels. Prepare onions, peppers, or chilis if you plan on adding these to the burritos. Saute hash browns until browned. Scramble eggs, adding cheese and salt and pepper. Place tortillas on a cookie sheet in oven to warm them - this will make it easier to roll the burritos without tearing the tortillas. To assemble: Place tortilla on a square of foil or parchment paper. Fill with scrambled eggs, sausage, and potatoes; adding optional ingredients before tucking ends in and rolling up the burrito. Wrap in foil or parchment paper. Repeat with remaining tortillas. Can be made the night before and reheated in the oven before bringing to the swim meet. Please label the burritos as to whether they are sausage, bacon, or vegetarian. Enjoy!! |
What's New Around the Pool? Have you noticed the new flags? The team purchased new backstroke flags for the Rec Center and they look terrific. Another upgrade coming soon - new lane lines!! TEAM PHOTO NOV 10th, 4:15pm Imagetek will be at the pool to take our team photo. Please wear team suits and the green tshirt. They have photographed many local sports teams and offer a great rate: $10 for an 8x10; $6 for a 5x7. REVISED MEET ENTRY DEADLINE FOR FALFINS The new meet entry deadline for the Falfins Dec 12-14 meet is WED, NOV 12. We are excited to have the opportunity to participate in this meet at the Olympic Training Center. We will get the meet information out to the team as soon as it is available. COLORADO SPRINGS HOTEL INFORMATION FOR FALFINS MEET, DEC 12-14 Thanks to Lisa Morrow for making the hotel arrangements with the Clarion Hotel in Colorado Springs. The hotel is holding 20 rooms under "Evergreen Hurricanes" at a rate of $69 per night plus tax. You can call the hotel to reserve a room as part of the team, at 719-471-8680.
